BBQ Chicken & Veg
150g chicken breast
small garlic clove
cayenne pepper (optional)
1 tbsp tomato paste
choice of veggies
Put all ingredients (except chicken) in a blender or food processor to make a paste. Baste the chicken & put it in a sealed container. Better if left overnight. Bake for 30min at 200 degrees. Turn over and coat with marinade, bake for further 15min.
In the meantime prepare the veg & place it in a tray. spray with oil, season & cook for 15min or to your liking, alongside the chicken.
Tip:Make more of these in advance and freeze for super busy days
