Chilli Slice
2 chillies (red + green)
2 carrots
1/4 cup oats flour
1/3 cup chickpeas flour
2 tbsp tapioca flour
2 eggs
dash turmeric
2/3 tsp baking powder
zest of lime
1 tsp onion powder
1 tsp garlic powder
salt
1 1/2 white wine vinegar
Instructions:
Preheat oven to 175 degrees.
Whisk eggs until foamy and thick.
Add grated carrot, lime zest, chillies, and mix through. Put baking soda in a cup and add vinegar to activate. Pour foamy mixture into the batter and mix through.
Add onion and garlic powder, some salt and the flour. If flour soaks too much moisture, add 1/4 cup of water. Pour mixture into a non stick tin.
Bake for 50-60min. Remove from oven and let it cool completely. Enjoy
Tip: Add other spices and herbs and make it full of flavour.
