Coco Lime Chicken

2 chicken breasts (or equiv. tenders)

1 tbsp extra virgin coconut oil

3 kaffir lime leaves

1 tsp garlic powder

salt & pepper

Instructions:

 

Heat a frying pan.

Cut chicken breast into tender sized portions, tenderize carefully and lay them on baking paper.

Cover them with coconut oil (doesn't need to be melted - roughly spread).

Take the kaffir lime leaves and cut them into small bits with scissors (smaller the better).

Spread them evenly on the chicken and season them with spices.

Add them to the frying pan and cook them golden brown or until cooked through.

Let them rest while preparing the sides and serve. Enjoy.

Tip: It's amazing with some black rice & salad on the side
