Seville's Eggplant Boats
120g Lean beef or Veal
1 medium Eggplant
2 green pepper
1 garlic clove
extra virgin olive oil
salt & pepper
Preheat oven to 170 degrees.
Cut the eggplant lengthwise in half and soak for 30min in cold salted water. Take out and dry. Remove seeds from peppers and dice.
Heat a fry pan and spray with oil.
Place the eggplants in the pan and cook until soft. Remove eggplants & place them flat next to each other in a ovenproof dish.
Place the green peppers, garlic & diced onion in the pan. Saute. Add mince and cook until brown.
Dice the tomato and add to the pan. combine by mixing through, Finally add paprika, salt & pepper along with 1/4 cup of water to make it smooth and saucy.
Spoon the mince mixture on the eggplant boats and put it in the oven for 15min or until cooked through. Serve with rice. Enjoy
Tip: You can use canned tomatoes or passata instead of a tomato as well
